The NPC corp you end up in when you leave a player corp is entirely dependent on your character's bloodline. In OP's case, you will end up in Aliastra again, just like the first time you quit a player corp.

Well, there's the Contracts button on the left side bar, which bring up a nice window with a "Create Contract" button in the top middle. Or you can select the items in your hangar directly and right-click and choose the "Create Contract" option.
